Lemon Tahini Dressing

To make Dark Leafy Greens delectable!

In blender, cover blender blades with Sesame Seeds (Can be soaked overnight, optionally)
Blend to cornmeal consistency.

Leave blender on and add:
1 C Cold-pressed Oil
1 Juice of Lemon
1/8 C Nama Shoyu OR Soy Sauce, liquid aminos, OR coconut aminos
3-4 stalks Celery
2 Tbs. Fresh Onion
1 Green or Red Pepper (seeded/stemmed)
Few dashes Black Pepper (fresh ground)

Blend until smooth. Keeps in fridge 4-5 days.

(Tip: Store in empty ketchup squeeze bottle) Yummy thick!

Nut Milk

Cover blender blades with nuts, (soaked works best.) I use almonds the most. Add 1 ½ – 2 C Water, ¼ tsp Vanilla extract 3-5 Dates or other sweetener Blend thoroughly! The amount of nuts to water depends on how thick you want the milk. For cream like nut milk, try cashews.

Optional: Squeeze through seed bag to remove solids. You can make a seed bag from nylon organza from the fabric store.

Flax Crackers

3 C Flax seeds in enough clean water to cover the seeds plus a little more.
Soak until the seeds have jelled, a couple of hours to overnight.
When the flax has jelled you will now blend the seasonings.
Blend the following up in a blender.
(Don’t put the flax in the blender!)

1 juice of orange
1 red onion, chopped
2 cloves of garlic
Handful of fresh Basil
3 tsp chili powder
3 tsp Tamari or liquid aminos or soy sauce

Add 3 small tomatoes and blend coarsely to keep tomatoes chunky.

Stir in soaked flax seeds.

Spread batter thickly on solid dehydrator sheets.
Dehydrate at 105* for 4-6 hours. Peel cracker to dehydrate on other side for another 4-8 hours until crisp.

Play with the seasonings for the crackers. Mix and match seasoning by adding apple cider vinegar, peppers, roasted garlic and rosemary, sage etc. Fennel, sesame or sunflower seeds are good. Think of the crackers you like and season accordingly. Remember that the flavors intensify.

Flax Breakfast Cereal or Dessert!

Ingredients:
Flax seeds.
Seed and nuts like chia seeds, sunflower seed, sesame seeds, chopped almonds, pumpkin seeds etc. Dried fruits like coconut, currents, figs, raisins, dates, date sugar etc.

Mix equal amounts of flax seeds and a combination of chopped nuts & dried fruit. i.e.1 cup flax seeds and 1 cup mixed nuts and dried fruit.

Mix up and store the mixture in the freezer then use the amount you need daily.

For Cereal: Cover 1/3 cup of the flax mixture with water a little above the mixture before retiring night before. In the morning, stir in Nut Milk and add any fresh or frozen fruit. Frozen berries and bananas are yummy! Yogurt or cashew milk is nice too.

For Dessert: The same as above but soak the mixture for an hour or so instead of overnight.
